Vineyard: The Pinot Noir comes from two different parcels, both situated at an altitude of around 750 meters . The vines grow on clay-limestone soils, which ensure freshness, elegance, and aromatic precision—particularly important for high-quality rosé base wines with structure and a fine acidity.
Soils: Calcareous, clayey soils with good drainage — ideal for Pinot Noir with fine minerality and elegant fruit.
Orientation: Different plot locations, optimally aligned for early ripening and aromatic balance of Pinot Noir.
Climate: Continental-Mediterranean with strong day-night temperature differences; cool nights preserve freshness, acidity and aromatic clarity — ideal conditions for elegant, long-aged rosé Cavas.
Vinification: Hand-harvested at the end of August; cooling of the whole grapes; pneumatic pressing to obtain the purest must; natural clarification through cold; slow, temperature-controlled fermentation; blending of the parcels; tirage in January–February; 36 months of bottle aging in cool, underground cavas.

Tasting note: Delicate pink with subtle salmon highlights. The nose offers fine red fruit aromas, citrus peel, floral notes of violets, and a sweet hint of brioche from the extended lees aging.
