Grape variety: 100% Chardonnay

Production: Cava de Guarda Superior Brut Nature with at least 70 months of lees aging; base wine partly aged in new French oak barrels; very low yield through direct, pressureless pressing; tirage in January–February; second fermentation and long maturation at a constantly low cellar temperature.

Origin: Utiel-Requena, Spain

Vineyard: The Chardonnay comes from parcels that are just under 20 years old, where the vines thrive on stony, calcareous soils. The location at an altitude of approximately 750 meters ensures high aromatic intensity, natural acidity, and optimal balance—ideal conditions for extended lees aging and finesse.

Soils: Stony, calcareous soils with high minerality and excellent drainage — defining structure, clarity and elegance.

Orientation: Plots at medium altitude with optimal exposure for early-ripening Chardonnay.

Climate: Continental with Mediterranean influences; warm, dry days and cool nights promote concentration, freshness and precise aromatics.

Vinification: Hand-harvested into 15 kg crates at the end of August; re-selection of grapes in the cellar; direct, pressure-free pressing to obtain a highly reduced musto flor content; natural cold sedimentation; slow, temperature-controlled fermentation; subsequent aging in new French barriques with regular bâtonnage; blending of the best batches after sensory evaluation; tirage in winter; 70 months of bottle aging in underground cavas.

Tasting note: Brilliant golden yellow with fine, even perlage. On the nose, great intensity and elegance: mineral notes, ripe yellow fruits (apple), toasted bread, vanilla, a touch of smokiness, and hints of nuts. On the palate, silky, powerful, and long with creamy mousse, precise acidity, and impressive length—a dense, serious, and profound Brut Nature.

Food pairing suggestion: Perfect with lobster, scallops, complex fish dishes, aromatic poultry dishes, mature cheese or as an elegant accompaniment to special occasions.
