Vineyard: Bush vines aged 50 to 90 years, traditionally cultivated using dryland farming (without artificial irrigation).

Climate: Mediterranean climate with hot summer months and low rainfall; the vines benefit from the high altitude and the cool breezes from the surrounding countryside, which provide freshness and balance.

Vinification: Hand-picked into 18-kg crates, destemming and gentle crushing of the grapes, maceration for 5 days. Subsequent alcoholic fermentation in stainless steel tanks. No fining, no filtration, and no addition of sulfites.

Maturation: Aging for 5 months in French barriques (225 l), followed by assemblage before bottling.

Tasting Note: Brilliant ruby red. On the nose, red fruits such as strawberries and cherries, dark berries (blackberries, blueberries), balsamic notes of Mediterranean herbs, and spices such as bay leaves and pepper. On the palate, fruity with fresh acidity, round tannins, and a medium-long finish.

Food recommendation: Goes perfectly with Mediterranean meat dishes, braised dishes, pasta with strong sauces and medium-ripe cheese.
