Origin: DO Penedès, Massís del Garraf, Catalonia
Vineyard: "La Calma" single vineyard, 2.5 hectares at an elevation of 290 meters, with a northeast exposure. The Chenin vines, up to 40 years old, grow on calcareous soils with marine fossils. Organic farming, no irrigation, and exclusively manual harvesting.
Soils: Very shallow, calcareous clay soils on dolomite limestone – mineral, permeable, with a high content of active limestone and fossil deposits, typical of the karst profile of the Massís del Garraf.
Orientation: Northeast
Climate: The 2022 vintage was characterized by extreme heat and drought. The harvest yield was only about 50% of the previous year's. Nevertheless, the wines produced were full of character, fresh, elegant, and with great ageing potential. The Chenin grapes ripened slowly and developed a pronounced phenolic structure.
Vinification: 80% of the musts were fermented spontaneously in stainless steel tanks at a controlled temperature, and 20% in new and second-use French barriques. This was followed by 6 months of ageing on the fine lees in wooden barrels, followed by 2 years in bottle. Minimal sulfur addition, and only light filtration and clarification.
Maturation: 6 months on the fine lees in French oak, 2 years bottle aging
Alcohol content: 13.5% vol.
Tasting Note: Bright golden yellow with greenish reflections. Intense aromas of peach and passion fruit on the nose, complemented by subtle smoky and mineral notes. Fresh and balanced on the palate, with ripe white fruit, salty minerality, and a creamy texture. A long, elegant finish with characterful depth.
Food pairing: Excellent with mature hard cheese, cod, poultry dishes and Japanese cuisine.
