Production: Temperature-controlled fermentation in stainless steel (approx. 18 °C over 15 days); no wood aging; fully dry-aged; bottled young to preserve aromatic purity.

Origin: San Michele – geographical location in the municipality of Canale, Roero, Piedmont (DOCG)

Vineyard: The grapes come from the Cru vineyard San Michele in Canale. Arneis vines grow on calcareous-sandy, well-drained soils that contribute elegance, minerality, and aromatic precision; meticulous vineyard work and hand-harvesting.

Soils: Calcareous sandy soils with high minerality and natural freshness.

Orientation: Not specified (typical gently sloping hills of the Roero region)

Climate: Continental microclimate with warm days and cool nights; dry harvest weather in 2024 favored aromatic purity and stable acidity.

Vinification: Gentle pressing; natural pre-clarification; 15-day fermentation at 18 °C in stainless steel; no malolactic aging; no wood or long-term lees aging to preserve the typical freshness and salinity of Arneis.

Alcohol content: 14% vol.

Tasting note: Bright straw yellow. On the nose, clear, defined aromas of apricot and apple , accompanied by delicate chamomile notes . On the palate, saline, harmonious and elegant, with good structure, depth and a precise, fresh finish.

Food pairing suggestion: Ideal with antipasti, fish and seafood, risotto, pasta with vegetables, light meat or as an elegant, fresh aperitif.
