Despite all that yellow fruit it stays fresh on the palate and finishes mineral, with a slightly salty edge.\u003c\/p\u003e\n\u003cp\u003ePour it with poultry in morel cream, asparagus with hollandaise, a paella or raw-milk goat and sheep cheeses.
