The press wine was not used but discarded or used for other purposes, such as making vinegar.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe wine was clarified two or three times throughout the year by natural sedimentation, removing the yeast sediment. A few liters were discarded to ensure maximum purity.
